Liz's Cranberry Walnut Muffies

A treat that also offers health benefits? There really is such a thing! Liz’s Cranberry Walnut muffies offer the benefits of antioxidant-rich cranberries, fiber-filled oatmeal and whole wheat flour, plus omega-3-packed walnuts--all in a sweet little 100-calorie package. A “muffie” is a cross between a muffin and a cookie. What you get is soft and sweet! This recipe is also super easy and quick to make. Healthy and fast – what more can we ask for during the busy holiday season?
2 cups whole wheat flour
1½ cups rolled oats
1 teaspoon baking soda
½ teaspoon salt
¼ cup canola oil
½ cup applesauce, unsweetened
¾ cup packed brown sugar
1/3 cup granulated sugar
1 teaspoon vanilla
¾ cup dried cranberries, chopped
¾ cup walnut pieces, chopped
Preheat oven to 375 degrees Fahrenheit. In a medium bowl combine flour, oats, baking soda and salt.
In a large bowl combine oil, applesauce, brown sugar, granulated sugar, eggs and vanilla. Add flour mixture; stir to combine. Stir in cranberries and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until golden brown but soft in the center. Cool 1 minute on cookie sheets. Remove to wire racks; cool completely.
Makes 72 muffies (36 servings of 2 muffies each)
Dietitian's Tip: Freeze muffies in snack-sized plastic bags. Thaw in the refrigerator for a quick 100-calorie snack, compliment to a breakfast-on-the-go or guilt-free treat year-round.
