1 package pizza crust mix (available in baking aisle of most groceries)

3 medium onions, cut in half and sliced thinly

1 Tbsp. olive oil

½ tsp. freshly ground black pepper

¼ cup grated Parmesan cheese

½ cup shredded low-fat Swiss cheese

Preheat oven to 425 degrees. Prepare pizza crust mix according to package directions. Spread pizza crust on baking sheet or in pizza pan (any shape will work).

Heat olive oil in skillet and sauté onions until light golden brown. Add pepper to taste. Spread onions on prepared crust and sprinkle cheeses over top. Bake 15 to 20 minutes, or until edges are golden brown. Cool for 10 minutes, then cut into wedges or squares and serve. Serves 4.
